Green Goddess Coleslaw

Ingredients
  

  • 1 cup daikon radish sliced into matchsticks.
  • 1 cup rocket arugula.
  • 2-3 cups cabbage finely shredded.
  • 1 avocado.
  • 1/2 red onion finely sliced.
  • 1/4 cup sliced black olives.
  • 1 cucumber sliced into matchsticks.
  • Dressing.
  • 1 Tbsp tahini.
  • 1 lemon juiced.
  • 1 clove garlic crushed.
  • 1 Tbsp apple cider vinegar.
  • 2 Tbsp olive oil.
  • salt and pepper to season.

Method
 

  1. Prepare all your vegetables and place into a large mixing bowl.
  2. Place all your dressing ingredients into a jar and shake to mix, alternatively you could also put it into a bowl and whisk to incorporate.
  3. Pour over dressing about 15 mins before serving, taste test and season more if needed.
  4. Enjoy!
